A sink or toilet outdoors still needs a proper drain. In most cases, that means a new buried drain line sloped back to the house's building drain or sewer lateral. Since an outdoor kitchen is often far from the house, the line may be long, and it must be deep enough and well bedded to keep its slope through freeze-thaw cycles.
A pool house bathroom is plumbed much like any other bathroom, with drains, vents and supply lines that are tested and inspected before walls close. If the pool house is not heated, everything needs to be designed for draining in winter, including the toilet and traps.
Why not just drain to the yard?
Food waste, grease and soap from an outdoor kitchen sink should not be dumped onto the lawn or into a storm drain. That water belongs in the sanitary sewer, where it can be treated.

The line is sized for the appliance, buried at the proper depth with tracer wire and fitted with an accessible shutoff near the appliance.
